‘De la Llotja a la Cuina’: Little-recognized fish valorization project on the Costa Brava

One of the biggest challenges in the fishing sector is that of species of low commercial interest; little-known fish that don’t get enough exposure in the markets. Many of these species have high gastronomic qualities. Good flavors and textures but a big drawback: consumer ignorance.

This 2022, the restaurants of La Cuina de l’Empordanet provide solutions and culinary resources to the problem, through recipes with 17 different fish species of low commercial interest.

‘De la Llotja a la Cuina’ proposes this year a series of video recipes on Instagram, a book with these recipes and valuable information about fish species, three show cookings and three demonstrations at hospitality schools in the Girona regions. It is an operation co-financed by the aid of the European Maritime and Fisheries Fund – GALP Costa Brava.
